Avocado Pie
From the kitchen of Cadillac Ed (RIP1988) Yelapa, Mexico
Turns out like a frozen ice-cream pie...
Ingredients:
- 1 9 inch baked graham cracker pie shell
- 2 egg whites
- 1/2 cup sugar
- 2 large ripe avocados
- 1/4 cup fresh lime juice
- 1/2 tsp lime zest
- 1 can (200ml) sweetened condensed milk
Instructions:
- beat egg whites to soft peaks... gradually add sugar.
- in another bowl, mash avocados until smooth... add lime juice and zest... beat until blended... gradually adding sweetened condensed milk.
- fold the meringue into the avocado mixture.
- fill the pie shell and refrigerate for at least three hours.
