Cowboy Bob's Caesar Salad
Ingredients:
- 1 head romaine, wash and dry well
- 2 or 3 toes garlic crushed
- 1/3 cup virgin olive oil (none other)
- 1 Tbsp red wine vinegar
- juice of 1 fresh lemon
- a few drops Worcestershire sauce
- 1/2 tsp salt
- 1/16 tsp dry mustard
- 1 coddled egg (optional)
- cracked black pepper
- 5 anchovy fillets, chopped
- Prepare or purchase 1 cup of croutons
Instructions:
- Pepare dressing: (hand whisk or use fork, not in blender)
- Hand tear and place the romaine in a salad bowl
- Add dressing to romaine and toss well
- Add croutons and toss
- Add 2 to 3 Tbs Parmesan cheese and toss
- Top with a generous amount of fresh cracked black pepper and 5 anchovy fillets, chopped

- Serve at once - 4 servings
