SOM TAM (Thai Green Papaya Salad)
- great lunch for 1 or serves 2-4 as a side dish.
In a larger stone mortar or suitable bowl... crush slightly…
1 toe garlic
1-4 whole Thai chili (depend on your heat preference)
...Add and continue to crush and mush
30 mL (2 Tbs) fresh lime juice
15 mL (1 Tbs) palm sugar (substitute brown sugar)
15 mL (1 Tbs) nam-pla (Thai fish sauce)
2 green beans (Thai preferred) cut to 3cm (1") pieces
4 cherry tomoes (halved)
...continue to crush and mush
...Add and continue to crush and mush
250 mL (1 cup) shredded green papaya
a little shredded carrot (for color)
a little shredded red cabbage (for color)
...continue to mush and soak all the papaya ...add
50 mL (1/4 cup) crushed peanuts
Serve garnished with peeled cucumber slices
