SIBOYA MEE NAM PAK
(noodle vegetable soup) - serves 1

Ingredients:
500 mL (2 cups) chicken or vegetable broth
300 mL (1 1/3 cups) rice noodles (4 mm size)
1 handful of mixed vegetables
15 mL (1 Tbs) sautéed chopped garlic
125 mL (1/2 cup) bean sprouts
chopped green onion and cilantro
ground white pepper

Method:
-- Place noodles in a container and cover with room temperature water for 1/2 hour prior to this prep.

-- Cut your selection of vegetables into small bite sizes and parboil only those that will not cook in 1 minute.

-- In a sauce pan bring the broth to a boil... add vegetables and noodles... just return to boil

-- In a big soup bowl... add sprouts and garlic... add hot soup.

Garnish with chopped green onion and cilantro... and a dash of ground white pepper.
