SIBOYA CHICKEN CASHEW
(Lunch for 1 or serves 2 as a side dish)
Stir fry in a wok... (until just done)
200g (8 oz) boneless chicken strips
In a mixing bowl, add...
1/4 of a white onion (coarsely chopped)
5 mL (1 tsp) palm sugar (sub white sugar)
45 mL (1.5 Tbs) Tom Yum paste (Mae Pranom)
45 mL (1.5 Tbs) oyster sauce
a splash of Chinese cooking wine
4 slices of banana pepper (or sub)
1/4 C chicken broth
1/4 C cashews
Add to the wok...
when the chicken is cooked, add the above ingredients and stir fry for 2 minutes.
Garnish...
with 1 chopped green onion and few sprigs of cilantro, serve with Jasmine rice.
