FROM THE KITCHEN AT SIBOYA BUNGALOWS

SIBOYA YUM TOFU
(Hot and sour tofu salad) Lunch for 1 or serves 2 as a side dish.

...in a fry pan saute until well browned
200 g (1 C) firm tofu (crinkle cut into 2cm x 1cm cubes)

...in a mixing bowl, add
30 mL (2 Tbs) "Chili for chicken sauce"
20 mL (2 tsp) nam pla (Thai fish sauce)
25 mL (1.5 Tbs) fresh lime juice
30 mL (2 Tbs) broken cashews
15 mL (1 Tbs) crushed peanuts
1/4 white onion (chopped coarsely)
1-4 crushed Thai chilis (how spicey do you want it)
1/2 tomato (chopped coarsely)

...add the tofu, mix and let rest for 10 minutes

Toss and garnish with 1 green onion and few spriggs of cilantro, serve.
